This traditional slow cooker beef stew recipe is the perfect comfort food on a chilly evening.
Ingredients
- 4-5 celery sticks, thickly sliced
- 1 onion, chopped
- 3-4 big carrots, chunkily sliced
- 2-3 potatoes, cut into chunks
- 5 bay leaves
- 2 tsp dried thyme
- 1 tbsp oil
- 1 tbsp butter
- 3 tbsp plain flour
- 2 tbsp tomato purée
- 2 tbsp Worcestershire sauce
- 2 beef stock cubes, crumbled
- 850g stewing beef cut into nice large chunks (or diced beef)
Instructions
- Put the celery sticks, onion, carrots, potatoes, bay leaves and dried thyme in a slow cooker with 1 tbsp oil and 1 tbsp butter.
- Soften for 10 mins, then stir in the plain flour until it doesn’t look dusty anymore, followed by 2 tbsp tomato purée, 2 tbsp Worcestershire sauce and 2 crumbled beef stock cubes.
- Gradually stir in 450ml hot water, then tip in 850g stewing beef.
- Adjust the time on your slow cooker to suit your needs or until the meat is really tender and the sauce is thickened.
Notes
Cooks Notes:I use rapeseed oil instead of vegetable oil.
As this stew is so easy to prepare, I usually cook this in the morning before I leave for work and by the time we all get home from work and school, this beef stew is all ready for us to tuck in 🙂
